Brazil
Floresta (floh-RAY-stah)

Farm: Fazenda Floresta is one of 14 farms that comprise Cooperbio surrounding Chapada Diamantina, in the Bahia state of Brazil. The “chapadas” of this area are towering rock formations, pockmarked with caves and streaked with deep chasms that sprout waterfalls during the rainy season. Sloping away from the base of the Chapadas are mineral rich alluvial fans where the coffee is grown. Chapada Diamantina is the best known of these formations, scoured by early Portuguese settlers in search of diamonds, hence the name. Though this farm has been certified organic since 2001, it has upped the ante by becoming certified biodynamic by the Demeter Association. Biodynamics is uber organic, a marriage of land stewardship, animal husbandry, social consciousness and the implementation of lunar cycles in the planting and fertilizing activities to obtain the optimal universal bond with the farm. Well-drained, acidic, mineral rich and heavily composted soil create the ideal conditions for a superb organic coffee.

Cupping Notes: Muted orange acidity, almond & honey sweet body with a chocolate liqueur finish & hints of anise.


Guatemala
La Voz

Farm: Cooperativa La Voz, short for “La Voz Que Clame en el Desierto” (The voice that clamors in the desert) consists of 128 small family farms. These families grow coffee on the steep slopes of the San Pedro volcano, under a rich shade tree canopy that includes many trees native to the region (Citris, Ficus, Inga, Mango, etc.) that also provide homes to a diversity of migratory bird species. San Pedro, along with the Atitlan and Toliman volcanoes, are situated around one of the most beautiful lakes in the world; Lake Atitlan. All around this lake are communities of indigenous Tzutujil, Kakchiquel and Quiche Mayan people who have been cultivating coffee in these intensely rich soils for the past 90 years. This region hosts the ideal conditions to provide excellent coffees.

Cupping Notes: Sweet, juicy acidity beautifully balanced with a rich, caramel body & milk chocolate finish.


Honduras
Las Capucas (loss cah-POO-coss)

Farm: The community of Las Capucas is located in the Celaque Mountains, near Celaque National Park and Mayan ruins, in western Honduras. It is home to one of the most progressive coffee cooperatives in the country, COCAFCAL. The Cooperative was developed in the early 90’s and is comprised of 254 members, of which, ten make up the certified organic group. The structure for the Cooperative is supported by local coffee funds, including sales from coffee roasted by a small group of women within the cooperative. Ideal soil and climate conditions, high elevation, and excellent processing systems ensure a wonderfully delicious coffee.

Cupping Notes: Fine apple acidity, a light, crisp, yet nutty body and a baker’s chocolate finish.
