This antique cultivar comes from a small family farm next to the El Imposible National Forest in El Salvador, a critical reserve for endangered species of migratory songbirds. Washing & fermenting with mineral water from its hot spring, and processing with geothermal-powered equipment, this farm employs some of the most unique “green techniques” we have seen. El Imposible offers a deeply complex cup with notes of dried fig and tawny port. |

This farm is in the buffer zone of the Gunung Leuser National Park, a forested area that contains critical watershed areas and sanctuaries for rare and endangered wildlife. The Petani Kopi Organik Toraja Cooperative consists of 574 farmers (small-holders) with farms, locally known as “gardens.” They are located in Toraja, on the island of Sulawesi. Toraja coffee is known for its high body, low acidity, spice, sweetness and very mellow aftertaste, which will linger on the palate for many, many minutes. It is grown at altitudes of 1400 to 1900 meters. |
